Per averle in plain text io uso semplicemente una macro di mutt, ctrl+p
e manda in plain text, solo che devi dargli ogni volta che invii la key
altrimenti non funziona

macro   compose \Cp     "F/usr/local/bin/gpg --clearsign\ny"

O con procmail come ha scritto naitolo oppure metti que dentro il muttrc
